Soy chunks kurma

Ingredients:

Soy chunks - 1 cup
Clove or lavanga - 3
Cinnamon - 1 inch piece
Onion - 1 medium sized - sliced
Turmeric powder - 1/2 spoon
Ginger - 1 inch piece
Garlic - 2 pods
Tomato - 1 big - chopped
Green chillies - 2 - sliced vertically
Grated Coconut - 2 spoons
Coriander powder - 1 spoon
Cumin powder - 1 spoon
Red chilli powder - 1spoon
Salt - as needed
Oil - 2 table spoons
Coriander leaves - for garnishing

Process:
Step-1: heat oil in a pan, add cloves, cinnamon, onion pieces and fry till onions sauted.
Step-2: now add turmeric powder, ginger, garlic, tomato pieces, coriander powder, cumin powder, green chillies, red chilli powder, grated coconut and cook until tomato pieces are mashy with close lid and let it get cooled, then put in a blender, make it a fine paste.
Step-3: while it is being done, on another stove put a vessel and boil water like 2:1 ratio, i.e. 2 cups water for 1 cup soy chunks.
Step-4: when water started boiling add soy chunks and cook it for 7 minutes, then drain the hot water,  and pour cold water through the strainer, then squeeze water from soy chunks by hand with mild pressing and keep it aside.
Step-5: now put remaining oil in pan, add grinded masala paste, add salt enough for whole curry and let it get cooked for 5 min.
Step-6: now add soy chunks to it and cook until oil leaves the sides of the vessel with no lid. Then garnish with coriander leaves and serve.

orange mocktail

Ingredients:

For serving 2glasses each 8oz -
Oranges - 1 big
Water - 1/2 glass
Lime soda - 1/2 glass
Sugar - 1 spoon
Lemon slice - for garnishing

Process:

Step-1: peel orange and cut into big pieces, remove if any seeds. I have selected seedless navel oranges.
Step-2: put orange pieces in a blender with sugar, water and blend it like juice. If u don't like pulp, use juicer and get 1 glass juice w/o pulp.
Step-3: take a serving glass , put crushed ice
First, then pour orange juice then lemon soda and stir well. Garnish with lemon slice and serve.
Ratio of orange juice and lemon soda: 3:1.
I.e 3/4th of glass orange juice and 1/4th glass of lime soda. Adjust sugar according to your taste and sourness of orange.

Chocolate milkshake

Ingredients:

Skimmed milk - 1/2 cup
Hershey's chocolate syrup - 1/4 cup
Vanilla ice cream - 1 scoop
Redi whip - for garnishing
Chocolate chips - for garnishing

Process:
Step-1: put skimmed milk, chocolate syrup, vanilla ice cream in a blender and blend well.
Step-2: garnish with redi whip and chocolate chips then serve chilled.

Tomato sambar

Ingredients:

Tomatoes - 3 (medium sized and chopped)
Toor dal - 1 handful
Green chillies - 3
Salt - as per taste
Oil - 1 table spoon for tampering

For tampering:
Mustard seeds - 1/2 tea spoon
Cumin seeds - 1/2 tea spoon
Red chillies - 2
Turmeric powder - a pinch

Coriander leaves - for garnishing

Process:

Step-1: boil toor dal, mash it and keep it aside.
Step-2: boil tomatoes, green chillies with little water and salt until mashy. (Or else use canned tomato puree)
Step-3: now make tomato mixture into puree and mix with mashed dal.
Step-4: take a thick bottom vessel, put oil, after oil heated add tampering ingredients, while tampering crackled, add tomato dal mixture, add 1/2 glass water, add salt and bring to boil.
Step-5: garnish with coriander leaves and serve hot with rice.

Kalakhand

Ingredients:

Low fat Ricotta cheese - 1 tin (15 oz)
Fat free Condensed milk - 1 tin (15oz)
Ghee - 2 table spoons
Almond flakes - 2 table spoons
Cardamom powder -1 tea spoon

Process:

Step-1: take a thick bottom vessel, put 1 spoon ghee, ricotta cheese, condensed milk and mix well until get creamy texture (takes 5 min)
Step-2: put the vessel on stove in low flame and stir continuously to avoid sticking at bottom.
Step-3: cook it for 15 min and then add almond flakes and cardamom powder
step-4: cook for 5 more minutes and then you see that the mixture leaving vessel edges
Step-5: now apply ghee to a plate and place the mixture from vessel to the plate and spread even.
Step-6: now garnish with almond flakes, leave it to cool for 5 min and cut into pieces. Eat it hot or serve chilled after refrigerating for 2 hrs.

corn chat

Ingredients:

Corn - frozen 1 packet
Ghee - 1 spoon
Black pepper - 1/2 spoon
Onion - 1/2 (medium sized & chopped)
Tomato - 1 (medium sized & chopped)
Green chutney - 3 spoons

Green chutney ingredients to grind into fine paste:

Onion - 1/2 (medium sized & chopped)
Chat masala - 1 spoon (any brand)
Coriander or dhaniya powder - 1/2 spoon
Cumin seed or jeera powder - 1/2 spoon
Salt - as per taste
Ginger - 1 inch piece
Lemon juice - as per taste
Coriander leaves - 1 handful
Mint leaves - 1/2 handful

For garnishing:

Thin sev - 4 or 5 spoons

Process:

Step-1: Grind all the ingredients for green chutney to a fine paste.
Step-2: cook frozen corn in microwave for 3 min
Step-3: now add ghee, pinch of salt, black pepper, chopped onions, chopped tomato, green chutney to the corn and mix well.
Step-4: Garnish with thin sev and serve.
